What Are Your Plans For Valentine's Day? Going Out Or Staying In?


In years past, we  have always gone out for Valentine's Day but with the rising cost of food, trying to maintain a healthy eating lifestyle, and of course, children, we haven't gone out for Valentine's Day in many years.  There is also one other thing that holds me back from going out on the day for sweethearts and that is the amount of people that go out and the wait in all of the restaurants.  With that being said, I usually look for recipes that I can make a nice meal for our family and we celebrate Valentine's Day as family. Since I am a member of eMeals, I am using my menu plan to help me do that this year.  There are so  many great choices on my menu this week, it was a hard choice to make. I narrowed it down by choosing something that I knew my whole family would enjoy.  I chose the Baked Ziti with a green salad.  We love any type of pasta dish so I thought this would be perfect.  I am going to go ahead and post the recipe, just in case this meal might be of interest to you.  My meal plan is currently set to low fat meals, because as you all know, I am striving to become a healthier person these days. So here we go......

3 c cooked ziti pasta
½ pkg lean ground turkey, cooked & crumbled
16 oz pasta sauce
½ c RF ricotta cheese
1½ c part skim shredded mozzarella, divided
(½ t garlic salt, FF spray, Parm cheese, foil)
½ bag spring greens
½ red pepper, diced
½ cucumber, peeled & diced
(FF Italian dressing, FF croutons)


Combine cooked pasta and cooked turkey. Combine ricotta, 1 c
mozzarella, & garlic salt. In a squared sprayed pan, layer ½ of pasta,
½ c cheese mixture, and  ½ of sauce. Repeat, ending with  ½ c
mozzarella cheese. Sprinkle with Parmesan. Cover with foil. Bake at
350˚, 30 minutes. Take off foil and bake another 15 minutes.
Toss lettuce  with red pepper, cucumbers, croutons, and Italian
dressing.

Now, I will tweak this recipe a little bit such as using whole wheat pasta instead of the white pasta, I also will make my own pasta sauce.  But doesn't it sound yummy?  These are the type of recipes that I get from eMeals. They all sound so great!  I will be posting pictures next week of this recipe to let you know how it turned out.
